Same. I'm still running the stock wheels, but have been considering some aftermarket options such as Apex and Project6gr. Unfortunately, if you're wanting to stick with something at least as wide as the original wheels, you'll likely end up with 11 wide in the front and 11.5 in the rear.
Nobody seems to make a 10.5 with the correct offset for the front with a matching 11, with correct offset, for the rear.

If I end up going Apex, it will have to be their Forged Sprint line 11/11.5; but I'm not convinced they will clear now that I'm lowered.
If I go with Project6gr, they will custom make a forged wheels in the same size and offsets as the originals.
Neither option is particularly cheap, mind you.

Here is what I've gone with so far; it's evolved as the car has evolved. Lowering springs (Steeda Sport Progressives) and Whipple Supercharger weight etc.

Started with Velgin VF10s from 2024 and some of 2025. Awesome wheels. 20x10 and 20x11 with 285/35R20 and 315/35R20

Then in 2025 I went with some LMR SVE DHP1 that are same dimensions as the stock HP wheels and I went with a 305/30R19 and a 315/30R19 tire setup.

Due to the lowering springs AND the additional weight of the supercharger the 19" DHP1 only give me just under 4" of ground clearance to the front splitter. That makes it tough to drive around the city.

So I've got some new lowering springs ordered (SKU 555-8225 - Steeda Mustang Minimum Drop MagneRide) and am thinking of getting some Apex VS-5RS in 20x10 (ET35) and 20x11 (ET52) wheels with 285/35R20 and 315/35R20 tire. This looks like the stock HP wheels just an extra inch. Richard Hammond has these on his EU Dark Horse.

I stand corrected! Apparently someone does make the original sizes w/o needing to have them custom made.

A buddy of mine with a Mach 1 HP went with Apex 19x11 et52 in back and 19x11 et26 up front. 305/30 on all four. It's his track set. Apex recommends additional negative camber up front with that setup. He kept the OEM wheels for the street.
