Greetings,
I'm an Android User but it looks like you can disable carplay on your iPhone under settings > screen time. You can also disable it on the car under devices.

Android auto has similar features allowing you to have it start playing music when it connects to the car or start it manually.

You can also turn off the audio before exiting the vehicle in which case it'll be off when you get back in.

In your phone

settings--> general-->carplay-->choose the car then toggle the switch off

I believe there is also a setting for the blue tooth connection to the Mustang in your phone settings which also needs to be turned off so that you don't get the 'unable to connect with your device... message on the dash display.
