I use a Draggy® which seems closer to reality, but has never agreed with the on-board timer.

Sorry to hear this about your 0-60 times. My '25 DH has 275 Pirelli P Zeros and it will hook hard with the 10R80 10 speed with 3.55 gears. Tires make a huge difference.
