Will that DSP allow me to switch between Surround and Stereo? Right now, my settings will not allow me to switch between Stereo and Surround. I am assuming it is because of the aftermarket amplifier, PAC, etc.

It won't.
Surround mode is not generated in the head unit, but in the original DSP which is bypassed by the PAC.
If your amp has an integrated DSP it might be possible to define different sound profiles and switch them via Bluetooth or a remote.
