If your engine has a mass airflow sensor it will see any extra air and compensate. Same goes for wideband O2 sensors.
If it is speed density that may be true. Or a carbureted engine. Headers probably won't change it enough to matter though.
A lot of people say the car "runs rich" with headers...
You're looking at an old chart before they added more mods. That's back when they just did ported heads
They are trying to show the difference heads made before they talk about cams

do the Whipple and just use SmoothBoost to effectively turn it off while you're doing your track stuff
