Am I missing something here? This is the Eco-Boost forum, and all I found under SCT was for the GT V8. The Ford Performance Tune for the Eco-Boost is the best choice in my opinion.
A lot of the weight difference seen here is the fuel load. Gas weighs just over 6 pounds per gallon. With the tank size 18 and a fraction gallons, that is about 110 pounds.
Actually weighing a vehicle with driver in the car is the correct way to do it. I drive a 2024 Eco-Boost Premium, and the advertised curb weight (supposedly wet with all fluids?) is 3,512. It actually weighs 3,525. With me in it, 3,690.
