I think he means the oil temp. It's an algorithm that the computer interprets based on the engine info. There is no dedicated temp sensor for the oil.

That pressure is normal. No need to wait until driving.
On cold starts, I personally like to wait until the initial idle kick down (around 1k) before driving but that's just my OCD. It only takes about 30 seconds or so depending in ambient temps.
