Indeed! Look into HPDE events. Major car clubs (BMW, Porsche, Mustang, NASA, Audi) put on great events, with instruction, and they're generally quite safe and a lot of fun! This is just one example, use the search function for tracks near you.
I do a bit of HPDE and I always stick in the tow hook just in case I should slide off the track and need a helping hand. If no hook is available, they'll just grab onto whatever is easiest (suspension, etc.) and yank away. Their priority is to get you off the track pronto, not worrying about...

The GT has three settings for steering, which change the weight/effort. Who knows how it was assigned on the car you drove?
Tires, alignment, camber plates, and maybe even a tune can affect steering feel.
