Centrifugals build boost with RPM. They make almost none at lower RPMs. TVS/Roots/Twinscrew will make almost max boost at any RPM.
5k and up you're fine but you will feel the difference down low.
It's because if you put straight e85 in a Mustang it wouldn't run right
The fuel system components being damaged by ethanol hasn't been an issue in a long time.
Id personally avoid local shops or places that don't specialize in mustangs
Go with a big name place, you can do these cars remotely so take advantage of that. Don't get trapped into thinking you need a "custom" tune on a dyno.
