If you press and immediately release the voice button, you're talking to the Sync system - so you have to use the commands the car understands.I also find it annoying but I discovered that if you press the voice assistant button on the right side of the steering wheel and then say "FM 95.1" it will change to that.
However, if you press AND HOLD the voice button (wait for the bonk), your now talking to Siri/Google Assistant on your phone (assuming you are connected via CarPlay or AA) - so you have to use commands that Siri/Google Assistant understand.
Example Ford Assistant commands:
SET TEMPERATURE TO 72
LISTEN TO FM 95.1
LISTEN TO PATRIOT RADIO ON SIRUSXM
(there are other Ford Assistant commands, but I rarely use them).
Example Google Assistant commands:
I NEED DIRECTIONS TO 123 OAK ST in DETROIT or I NEED DIRECTIONS TO HOME DEPOT IN LIVONIA (sends to Google Maps or Waze)
DRIVE HOME (assuming you have a 'home' set in your map program)
SEND A TEXT MESSAGE TO VERONICA JONES ON MOBILE (looks up mobile number for Veronica Jones on your phone)
WHAT'S THE SQUARE ROOT OF 144? (Answers 12)
WHO WAS THE 16th PRESIDENT OF THE UNITED STATES? (Answers Abraham Lincoln)
WHAT IS THE CAPITAL OF FLORIDA? (Answers Tallahassee)
For Google Assistant or Siri, anything you could ask your phone is fine, as it's the phone, not the car answering/doing the chore.
