Yes. You can turn off the feature that puts the seat back when you shut off the car. I believe its called easy entry/exit. Its in the infotainment settings.
Its a little confusing because all GTs come with Brembo brakes standard. The "upgraded" Brembo package has larger 6 piston brakes and colored calipers. That Brembo package is optional on all GTs, and standard on Performance Pack cars.

To be fair, just because the Mustang back seats don't fit most full sized adults, doesnt mean they aren't useful. Having behind the seat storage for a backpack, jacket, bag of groceries, or small pet is way more convenient than a two seater.
Convertibles have more head room with the top up. And they're also way easier to get in and out of with the top down. Its not really a fair comparison to the hardtop. Also the OP is not considering a convertible since neither the M1 or DH are available in that configuration.
