Square pop-up "Engineering mode" popped up on the dash momentarily on startup today. But another startup message soon superceded it and the Engineering mode message did not persist, so I couldn't grab a pic.

What OP picture shows is the fitment of the (plastic) rocker molding to the (metal) rear quarter panel.
I don't think you can adjust that, other than maybe ghetto-rigging it with some rubber padding against the inside surface of the rocker molding to make it bulge out more, flush with the RQP...
I would definitely get rid of that car. Lemon law it. 30+ fault codes on a brand new car doesn't sound right, there could be various electronic issues, which are a real headache to root out. And definitely sudden stalling could be very dangerous.
