Do catch cans actually help out cars? Done incorrectly, they can actually increase oil consumption. I know this from the incorrect oil separator being installed by a shop on my Audi. But is there a real benefit, not theoretical, but a tested and measured benefit against a control?

Don't do that.

If you ever track the car you will appreciate that extra "room" in the pedal which gives you a lot more control over the throttle when at speed and trying to maximize your acceleration from turns. "Ramping up faster" means less control over the car on the track at part throttle.
