Literally the tune will be identical, I would only go with a tuner I can either call or go talk to in person.
So location matters, lidio at alternative auto is my rec, or livernois.

I didn't see Palm Beach Dyno in your considerations. Ken Bjonnes is and has been one of the top mustang tuners in the country for over 20 years and his resume is second to none. I met Ken and his business partner, Brandon Alsept in 2005 when they owned Modular Depot in Cincinnati, OH. They exclusively tuned and modified my mustang, my wife's and later my Roush 427R. Ken is very meticulous and conservative in his tuning so as not to put engines in harms way. Once he shut down Modular Depot and moved from Cincinnati area, I turned to one of his proteges, who continued with modifications and tuning of my Roush, that later became a dedicated Time Trial race car with NASA-Great Lakes. Give him a thought.

Not to chill your thrill but asking, since new to v8s and mustangs why so eager to jump into the recently opened deep end? Why not get to know her a bit before tweaking? How will you be able to judge the improvement when not familiar with the sop?

Id personally avoid local shops or places that don't specialize in mustangs
Go with a big name place, you can do these cars remotely so take advantage of that. Don't get trapped into thinking you need a "custom" tune on a dyno.
