I'm considering buying the LMR dark horse copycat wheel kit with 19x10-285 tire fronts and 19x11-325 tire rears. I currently have the stock 19x8.5-255 Tire wheels all around. Obviously, it's a good idea to get an alignment after changing wheels and tires, but will the alignment specs need to be different with wider wheels? Would that be published somewhere?

In general, no; however, there are caveats. Depending on how wide the tire is and how lowered the car is, you may need some extra negative camber to get the wheel to fit. If it's stock suspension and just wider tires, the normal alignment specs should be fine
