I think only you can answer that. Unless you have a physical impairment that would keep you from operating the clutch I feel you would be fine. Since the S550 the clutches have slave cylinders and is easy on the leg. I am 60 and will have either a manual M2 or a new S650.
Speaking of age, the average age of Mustang owners has gotten quite a bit older over the years. I believe isover 50yrs. old now. I just turned 60 myself.

GT With a PP is still quite a bit less expensive than a base DH. I ordered a SY GT, 400a, 6 MT, PP, red brembos and AE and the car stickers for $56k. A base DH is right at $60k.
The PP is really worth it on the feel of the car on its own. It firms it up when even a PP car is still pretty soft. The Torsen rear end and the Brembos are the main selliing feature. If you like the spoiler of the PP than thats another. With the S550 there were other items that made it...
First off are you getting any deal at all for the special order car? If not and you can live with the color that is already available I would move forward with that.

Carvana in one area will give a different amount in another area, as it is local market driven. Carvana offered me $27k for my pristine 2020 Mustang GT with only 31k miles on her with PP and such, I ended up selling it for $33K with in a month.
