My concern is it’s also made for the ecoboost engines and thus has provisions for that engine that may not apply as much to the stock (unboosted) coyotes. It’s an SN Plus/SP rated oil that reduces the chance of “LSPI”. SN Plus and SP oils also don’t have a 5w-50 variant.

As long as it’s in between the two marks you’re fine. You just have to monitor the level for stability, which may not happen for quite a while. Having it closer to the upper mark is a greater margin of safety if you’re not sure about oil consumption.
It’s not bad per se, it just resets your baseline for monitoring consumption, which is what really matters here (and not going below the lower mark). Maybe add only half a quart as you don’t want to go above the upper mark if it makes you feel safer.
