I've owned 2025 GT's with both 19 and 20. With a stock suspension, and going to 265/35R20, you'll hardly notice a difference. It seems handling is better. I bought a new 2020 Z51 Corvette with Mag Ride, and regardless of the Tour setting, my 6 speed GT with 20 inch wheels is easier to take.
Quiet is quieter than Sport mode, but Track seems the same as Sport. I might add I'm not a fan of my GT exhaust sound. I think it's suppose to mimic McQueen's Bullitt Mustang. I had a 1960 Thunderbird that sounded better.
I had Space Grey in an auto, and now Black in a 6 speed. There's a lot of Grey in Space Grey. I thought the white would be sharp, but there just isn't enough white like my old 2006 Dodge Charger RT that was all white. Go with Black-or even Red if it's appropriate.
