According to this video, the max DB's on rev in Normal mode was 100.3, while Sport gave 104.8, and Track was 105,8. So relatively small difference between Sport and Track, but still a difference!

It's a liability issue and also related to eco-regulations. So they need to make the car default to a compliant mode with things like auto-stop activated. That's the silly reason it won't keep and save our settings!

Honestly, I think the red goes well with the rest of your car, given the brakes and the Venom theme you have going. If nothing else, maybe try them for a while and see how they grow on you. Looks like they aren't permanent installations so they can be changed pretty easily if you change your mind.
