I had off-road headers on before I boosted the car, I’d suggest anyone to do the same

off road headers and a stage 2 kit is safer than stock catted headers and a “warranty stage 1”, more fun too.
Same. Why risk your engine when you're spending five digit figures on mods?

Anyone with the Stage 1 with warranty burning up cats? If so, did the 3/36 SC warranty take care of it?

Edmunds Dark Horse did but there was some thoughts that they covered it because they are Edmund's

I was told by a dealership owner that if you start burning them up, you'll get a CEL and in order for the warranty to be covered you MUST shut it down immediately and have it towed.

The smartest thing you can do if you do nothing else is remove them and stick some defoulers in there. So long as you don't live in a state that does visual inspections, that is. If you do, just gut them instead of removing them. If you live somewhere they do smog checks, I guess move?
