Steering gets so stiff can hardly turn the wheel with all my might when suspension is under hard load on track during HPDE events.

This makes me want to buy and install these just so that when I get good enough to run into this issue, or the rubber gets old enough, or some combination of the two, I do not run into this frustrating problem.
They are also the best camber plates you can find Highly recommend

My gut told me it could have been mechanical, well done you.
Yes I agree with that, It didn’t seem as if it was the EPAS giving out as under hard breaking before turn in and then trying to turn in under trail breaking was the most noticeable point and the system shouldn’t be having issues while the steering wheel is straight.

... I had changed the Camber plates to the Vorshlag Caster Camber Plates and I think the factory ones may have been the issue. The bearing in the factory ones is nowhere near as smooth and everything is made of rubber, ...

I've always wanted to put in camber plates, but I'm hesitant because of the increase in N&V. How do you folks like them on the street, do you get much more noise and unpleasant feedback or vibration on these compared to stock?

There is a reason that the factory uses rubber.

I didn’t notice any difference at all. And rubber is a lot cheaper and easier than billet so I would bet on that being more the reason than anything else.
