Took mine in for the recall and the dealership told me it was already completed via automatic update so they just gave the car right back to me.
But likewise, my FordPass app is still showing that I need to take it in for the recall... so I don't know how to get rid of that.
If you haven't done the PCM edit that would be a reason for gear numbers not to show up at all. That edit is what indicates whether or not the car has a "Select Shift Transmission" enabled. This might be part of @650_Brian's issue as well, maybe he can chime in here on if he was able to...

I don’t know the exact process, my build was a Job 2 and didn’t require it. But if you go back to the main ForScan thread with the spreadsheet you can see the conversation around it. That’s my best guess for what your issue might be.
Have you been able to modify any other values in the PCM module in ForScan? And what is the build date for your mustang?
On the main ForScan thread there are quite a few posts needing a BCM update for Job 1 vehicles in order to enable walk-away-lock. Not sure if that same update impacts PCM...
If your steering wheel buttons are working then you likely just need to do the FORScan steps from earlier in this thread.

You can try to ask your dealer if they'll do it, but I wouldn't count on it. If you already have a PP then it's an easy FORscan change that'll take just a second. Only cost is the adapter, or finding someone in your area who has FORscan and will do it for you.
