Removing those spacers is certainly one of them, it's dangerous to not.

I wonder if the speedometers are calibrated differently between the GT and GT PP.

I would go with the 305/30 in the rear
Stock 255/40/19 are 27" tall.
305/30/20 are 27.2" tall.
305/35/20 are 28.4" tall.

Just installed the Viofo A129 Pro. I got the front and rear cam but have only installed the front as of now.
Works great! In my opinion, don't cheap out on something that you might need in an insurance battle one day!

20x11 with a 305 tire is the same height as my GT wheels.
Your 315/35/20 tires are 28.7” tall. 305/30/20 are 27.2”. Stock 255/40/19 are 27” tall. With those aggressive lowering springs that’s why you’re rubbing.

Also, you're talking about .2" not making a difference but are saying you think the offset should be 2.5MM different.
.2" is a 5MM difference so Vibe is correct in what they are telling you.
305 is generally what people run on 11" wide
I believe that Project 6GR runs the same offset and they are fine.
A couple questions first so everyone is on the same page.
What's up with the camber, I'm assuming you're lowered? What lowering springs are you running. You obviously need some camber plates.
What size tires are you running...
Having gone through this exercise myself, I would go 20s with a 30 aspect ratio tire in the rear to keep tire heights the same. I would also ditch the Nittos and go with the Extreme Contact Sports, much better tire.
If you go 19s, go 35 aspect ratio tire but tire choices become limited
