Based on your asking why.......I mean lowering weight can make a significant difference in driving dynamics.... having driven a base GT350 and my R back to back...,lets just say you can tell a difference....lighter weight...
not sure if will get there but to start.....
lighter wheels
remove back seats
lighter seats in front
remove sound deadening (I think there is a ton in the S650)
lighter drive shaft
carbon fiber body panels
rip out the stereo - maybe even the A/C (A/C was optional on 15-18 GT350Rs)
thinner...
Im still waiting for someone to do something to try and make the car lighter vs. just following the same supercharge it! recipe....
Personally if given the choice between 250 more hp and 500 less pounds- I think I would go the 500 less pounds....

There is a difference between a car fully engineered to work cohesively together compared to a company that installs suspension part from this company - brakes from this company- supercharger from this...

What did they honestly expect when they took a car known for an engine that the majority of people love and introduce the same car sans that engine..

No offense but the Mach 1/ Dark Horse dont have the same amount of changes that the Shelbys did - so I would not consider the Dark Horse a replacement for the Shelby

I personally dont hate it- just forced induction = GT500 to me
And yes the orginal GT350s (at least from 1966 onwards) were offered with automatics - so not mad about that - from a drag racing perspective- I mean the 10 speed is an awesome transmission -
