Having just got my S650 (and done a back to back with my S550) it is very clear the S650 has a less sensitive initial travel on the throttle pedal. It will just be a mapping change. Press harder and it is fine!
I was really happy with the Continental Sport Contact 7's on my S550. Much better than the Michelin PS4S that it came with. I wouldn't hesitate to use them again.

Steering - smaller wheel and probably slightly heavier in 'Normal' compared to S550. Steering turn in and response is certainly better than before. Feel about the same.

The paddles can be removed and replaced by a blanking plate, which is what is normal on a manual car. The steering wheels are the same, just with either paddles or a blanking plate. Of course getting the blanking plates alone may be quite difficult.
