Those GT500s are still extremely fast cars. If it's a second car I'd get the GT500. If it's a daily I'd get the S650 and maybe mod it in the future. Like someone else said when you start adding power to an S650 the Coyote with the 10R80 will really lay it down.

If the C7 is an automatic it should be able to hit 60 in 3.7 seconds based on C&D reviews. C&D got the manual '24 GT to hit 60 in 4.2 seconds, so the auto should be around 3.8 seconds to 60.
I've driven in 10 degree temps on my GT PP with the Pirellis. No cracking or anything like that at all. The tires definitely struggle to grip more under 40 degrees, though.
