At cold engine start up my oil pressure runs between 105-110. Is that normal for a cold engine? And should I wait until it drops down in the normal range before driving?

I was just told that my DH ordered in March will be scheduled if I drop the handling pkg. However, if I don't delete the order then Ford may not fill it at all and won't be available in 2025. Sounds fishy to me. Could the dealer just be trying to sell me one this year to make numbers?
