I am only aware of one single OTA update that was delivered via WiFi, and that was to fix an issue with the TCU in order to address OTA updates over the TCU/cellular network. That was on my F150 a couple of years ago.
Oh, they can tell. Technically, they can only deny a warranty claim if they can directly tie the failure of the warranted part to your modification. But there is a lot of gray area where they can make it difficult if they so choose.

I do my own oil changes on my '24 Dark Horse (with strut tower brace). If you have a cordless ratchet, removing or reinstalling the bellypan takes about 1 minute, tops. Not a big deal at all.
It's really no different than saying, "It's my car. If I don't want to change the oil, I don't have to," NOT changing your oil, but then expecting Ford to pay for damages due to lack of maintenance.
