According to the ordering manager at my dealer, the transport company does know, but only after the car has been released (to them) for transport from the yard. Apparently, the dealer has no control over this, and isn't told exactly when the car will be transported before hand.

Are you a/z/x plan? If so Ford audits the sales contacts and could ding them if they didn't give you the right price and all the rebates/incentives you are due.

This sux. My car is also MIA. Dealer doesn't even know where it is for sure. No updates in vehicle tracking since it was accepted at the rail yard in Flat Rock. EDD removed this morning. Seems like there is a serious issue delivering cars to the West coast right now.
You aren't the only one. My car was produced 3/6, and has been awaiting shipment since 3/11. EDD is 4/6, which I don't see happening unless COTUS is just painfully stale.
I ordered my car on 11/22/17, and just got a VIN last week. May be faster for you because I think the hold up on mine was magneride, but who knows. Be prepared to wait.
